Choc Chip Cookie Sandwiches

Ingredients:

For the Chocolate Chip Cookies:

120g butter, softened

75g light brown sugar

75g golden caster sugar

1 medium egg

1 tsp vanilla extract

180g plain flour

½ tsp bicarbonate of soda

150g dark chocolate, cut into chunks

Instructions:

Prepare the Cookies:

Preheat your oven to 180°C (160° fan) and line baking sheets with parchment paper.

In a large bowl, cream together the softened butter, golden caster sugar, and light brown sugar until light and fluffy.

Beat in the eggs one at a time, then stir in the vanilla extract.

In a separate bowl, sift together the flour, bicarb, chocolate and ¼ tsp salt.

Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Stir in the chocolate chips.

Bake the Cookies:

Drop dough by rounded tablespoons onto the prepared baking sheets, spacing them about 2 inches apart.

Bake for 10-12 mins or until firm at the edges but still soft in the middle – they will harden a little as they cool

Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to wire racks to cool completely.

Assemble the Sandwiches:
